now that dillan is eating big people food. i've been toying with a million and one recipes.

i'm desperate to have dillan really love veggies. she'll eat them when i grind them up and stick it in her never fail food of choice, mac and cheese. other than that, it's hit or miss.
here is a knock out recipe for banana bread that i baked this morning. sooooooo good.
INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
DIRECTIONS
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
- In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
- In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
- Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
i substituted oil instead of butter for the batter, and made bread instead of muffins.

life def gets busier when you have to start planning carefully and cooking for a toddler/child. i'll send over some recipes and tips/tricks when i get the chance... better yet, just share them w/ you next time we get together. :) banana bread look good... and healthy... good job!

I love allrecipes! another one the kids like is the Whole Wheat Pancakes submitted by Jen. I don't bother with wheat germ (don't have any, and Whole Foods is too far). some stuff that never fails with Lucas is quesadillas and scrambled eggs... you can sneak alot in the them if you chop the veggies up fine..
